One of my absolute favorite things to make is chia pudding. Partially because it’s so versatile and easy to make, but mostly because it tastes delicious and is amazingly good for you. Chia seeds are packed with omega-3s, fiber, antioxidants and calcium, just to name a few. One unique quality of chia seeds is that they absorb liquid and form a gel-like exterior around each seed creating a pudding texture when they’re submerged. The larger the ratio of chia to liquid, the thicker your mixture will be. The varieties of chia pudding you can make are endless. Almond milk and coconut milk make great bases for the pudding but I love using Vanilla Cloud as the base because its already a bit sweet and contains delicious warming spices like cinnamon and nutmeg.
