Fall is the most grounding time of the year. The longer days allow time for lingering indoor activities. Time to reflect, write, and to be inspired through cookbooks and browse for delicious recipes. Since pureeing my first pumpkin of the season, I am constantly craving anything with pumpkin.
While growing up, I remember granola being a hearty mix of oats and honey with few other ingredients added in. If you walk down the grocery aisle today, you’ll find an entire section devoted to granola in all sorts of creative flavors and mixtures. This is a recipe you've got to try:
Crunchy Pumpkin Granola Recipe
Ingredients:- 3 Cups Rolled Oats
- 1 1/4 Cups Raw Pecans
- 1/3 Cup Pumpkin Seeds (Pepitas)
- 3 Tbsp Brown Sugar
- 1/4 tsp Sea Salt
- 1 tsp Pumpkin Pie Spice
- 2 tsp Ground Cinnamon
- 1/4 Cup (uncooked) Quinoa
- 1/2 Cup Pumpkin Puree
- 1/3 Cup Pure Maple Syrup
- 1/4 Cup Coconut Oil
- 1 tsp Vanilla Extract
- 2/3 Cup Dried Cranberries
