I'm excited about welcoming 2016: to make new goals, take new adventures and most of all, to begin to detox my body from the holiday season. December is a month full of making wonderful memories, enjoying flavorful (and sometimes not-so-healthy) food, and spending time with family and friends. Before the holidays, it’s important to me that that I take time to re-evaluate and reset my health and lifestyle to get through the busy year ahead!
I call this recipe the December Detox Salad. Even if it’s not the sniffles you’re getting rid of, we all need a little detoxing from the indulgence right before the holidays. I am sure many of you have holiday parties, cookie exchanges and family gatherings that have been occupying your time. I think it’s perfectly fine and healthy to enjoy some treats, but all the indulging can be a bit much after awhile! It’s nice to step back from the cookies, and enjoy a nice healthy salad that makes you feel full and gives your body some healthy nutrients. What I love about this salad is that it can help to re-boot and re-energize your system while helping to enhance your overall health and well-being. This detox salad is dressed with one of our faves- a light lemon sesame dressing that is full of flavor and good for you!
Ingredients:
For the salad:
- 1 cup chopped Romaine lettuce
- 1 cup baby spinach
- 1 large cucumber, chopped
- ½ cup shredded carrot
- 2 green onions, sliced
- ½ cup blueberries
- ½ cup avocado, sliced
- ½ cup snap peas, sliced
- 1 tbsp chia seeds
For the Dressing:
- 1 tbsp tahini
- 1 tbsp lemon juice
- Pinch of red pepper flakes
- 1 tsp sesame oil
- 1 tbsp rice wine vinegar
- 1 tsp honey
- ¼ tsp salt
- ¼ tsp black pepper
- ¼ tsp oregano
- 1 clove garlic, minced
Instructions:
- Combine all the dressing ingredients in a jar with a tight fitting lid, place lid on tight and shake until well combined. Set aside.
- Combine the salad ingredients into a large bowl. Drizzle with dressing. Sere immediately.
